Cork & Bubbles brings bubbly to Felida Village - The Columbian

Bette Davis once said, “There comes a time in every woman’s life when the only thing that helps is a glass of Champagne.” Despite an abundance of wine bars and tasting rooms, there aren’t many places in Clark County to indulge in Ms. Davis’ prescribed bubbly therapy.

Stacey Medak seeks to change that with her new business, Cork & Bubbles, a wine and Champagne bar in Felida Village. Medak hopes to open soon but is waiting for final approval from various agencies, including Clark County Public Health and the Washington State Liquor and Cannabis Board.

Medak’s friend, Michelle Hughes of The MH Design Studio, helped to transform the spot at 3602 N.W. 119th St., Suite 100 — formerly occupied by Vin X Vinos — into a comfortably elegant space filled with wood accents and warm colors. Guests can lounge on cushioned bar stools at the two bars, lean back in the couch and armchair area, or sit at tables for four or two.

On a visit to Sacramento, Calif., several years ago, Medak went to a bar that offered sparkling flights with a variety of flavors, including pomegranate, strawberry, almond and peach.

“I fell in love with sparkling wine and Champagne that you don’t get to enjoy at many places around here,” Medak said.

When she heard that Vin X Vinos was leaving its Felida Village space, she nabbed the spot for her wine and Champagne bar.

Cork & Bubbles will serve Champagne, as well as sparkling wine from California. A bubbly is called Champagne if it’s made in the Champagne region of France. All other effervescent wines are called sparkling wine. Medak is working on sourcing bottles from other places, such as Washington and New Zealand.

Pours will be available by the bottle, by the glass or in flights. Signature cocktails, such as an old fashioned or Aperol spritz; wine-based libations, such as sangria; and cans of craft beer, seltzer and cider round out the drink offerings.

The short food menu includes dishes not available at nearby establishments.

“I’m trying to be thoughtful of the other restaurants around me,” Medak said.

The food, like the decor, is elegant but approachable, with offerings such as meatballs in wine sauce, chicken skewers, bacon-wrapped asparagus, caprese skewers and cheese, as well as charcuterie boards.

Opening hours are 3 to 9 p.m. Tuesdays through Thursdays and noon to 9 p.m. Fridays and Saturdays. Cork & Bubbles will be closed on Sundays and Mondays.
